Description

These Gingerbread Snowball Cookies are a delightful holiday treat, combining warm spices and pecans for a rich flavor.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar (plus more for rolling)
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ cup finely chopped pecans

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together softened butter and powdered sugar until light and fluffy.
  3. Mix in vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together flour, salt, ginger, cinnamon, nutmeg, and cloves.
  5. Gradually add the dry ingredients to the butter mixture, mixing until well combined.
  6. Stir in finely chopped pecans until evenly distributed throughout the dough.
  7. Roll dough into 1-inch balls and place on prepared baking sheet, spacing slightly apart.
  8. Bake for 10–12 minutes, until cookies are set but not browned.
  9. Allow cookies to cool slightly, then gently roll them in powdered sugar while still warm.
  10. Let cookies cool completely before serving. For a thicker coating, roll in powdered sugar a second time once fully cooled.

Notes

  • For extra flavor, lightly toast the pecans before adding them to the dough.
  • These cookies freeze well for up to 2 months.
