Greek Chicken Meatballs served with a refreshing Greek salad and dairy-free tzatziki sauce.
Ingredients

- 1 cup mayonnaise
- 1 cup cucumber, diced
- 1 tablespoon fresh lemon juice
- 1 tablespoon garlic, minced
- ¼ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- ½ teaspoon dried dill
- 1 teaspoon fresh mint
- 15 cherry tomatoes, halved
- 2 cups English cucumber, diced
- 1 cup kalamata olives
- ½ cup red onion, diced
- ¼ teaspoon kosher salt
- 2 tablespoons Greek vinaigrette
- 1 pound ground chicken
- 1 egg
- ½ cup almond flour
- 1 teaspoon kosher salt
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried dill
- ½ teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon ground black pepper
- 1 tablespoon fresh mint, chopped
- ⅓ cup Greek vinaigrette (reserved for after cooking)
- Crumbled feta cheese (optional)
- Cooked rice (optional)
- Lemon orzo (optional)
- Pita bread (optional)
- Quick pickled onions (optional)
Instructions
- Combine all tzatziki ingredients in a food processor. Pulse until smooth.
- Adjust salt, lemon, or herbs in tzatziki as needed.
- Chill tzatziki in an airtight container until ready to serve.
- In a medium bowl, combine tomatoes, cucumber, olives, red onion, and salt for the Greek salad.
- Pour vinaigrette over salad and toss gently. Set aside.
- In a large bowl, mix ground chicken, egg, almond flour, salt, oregano, basil, dill, onion powder, garlic powder, black pepper, and fresh mint until fully combined.
- Scoop about 1½ tablespoons of the mixture per meatball and roll into balls. Place on a plate.
- Heat a large cast iron skillet over medium-high heat with 1 tablespoon of oil.
- Add meatballs to the skillet and sear on all sides for about 3 minutes.
- Reduce heat slightly and continue cooking for 10–15 minutes until internal temperature reaches 165°F.
- Transfer cooked meatballs to a bowl and pour ⅓ cup Greek vinaigrette over them. Toss gently to coat.
Notes
- Store-bought tzatziki can be used as a shortcut.
- Breadcrumbs can substitute almond flour.
- Store components separately for meal prep.
