Ingredients

  • 1 cup cucumber, diced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon garlic, minced
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon dried dill
  • 1 teaspoon fresh mint
  • 15 cherry tomatoes, halved
  • 2 cups English cucumber, diced
  • 1 cup kalamata olives
  • ½ cup red onion, diced
  • ¼ teaspoon kosher salt
  • 2 tablespoons Greek vinaigrette
  • 1 pound ground chicken
  • 1 egg
  • ½ cup almond flour
  • 1 teaspoon kosher salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried dill
  • ½ teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • 1 tablespoon fresh mint, chopped
  • ⅓ cup Greek vinaigrette (reserved for after cooking)
  • Crumbled feta cheese (optional)
  • Cooked rice (optional)
  • Lemon orzo (optional)
  • Pita bread (optional)
  • Quick pickled onions (optional)

Instructions

  1. Combine all tzatziki ingredients in a food processor. Pulse until smooth.
  2. Adjust salt, lemon, or herbs in tzatziki as needed.
  3. Chill tzatziki in an airtight container until ready to serve.
  4. In a medium bowl, combine tomatoes, cucumber, olives, red onion, and salt for the Greek salad.
  5. Pour vinaigrette over salad and toss gently. Set aside.
  6. In a large bowl, mix ground chicken, egg, almond flour, salt, oregano, basil, dill, onion powder, garlic powder, black pepper, and fresh mint until fully combined.
  7. Scoop about 1½ tablespoons of the mixture per meatball and roll into balls. Place on a plate.
  8. Heat a large cast iron skillet over medium-high heat with 1 tablespoon of oil.
  9. Add meatballs to the skillet and sear on all sides for about 3 minutes.
  10. Reduce heat slightly and continue cooking for 10–15 minutes until internal temperature reaches 165°F.
  11. Transfer cooked meatballs to a bowl and pour ⅓ cup Greek vinaigrette over them. Toss gently to coat.

  • Store-bought tzatziki can be used as a shortcut.
  • Breadcrumbs can substitute almond flour.
