  • 1 teaspoon salt
  • 2 tablespoons plain yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon fresh oregano, minced (or 1 1/2 teaspoons dried)
  • 1/8 teaspoon ground black pepper
  • 1 teaspoon lemon juice
  • 1 tablespoon extra virgin olive oil (plus more for grilling)
  • 2 lemons, thinly sliced
  • 1 cup plain yogurt (for tzatziki sauce)
  • 2 cloves garlic, minced (for tzatziki sauce)
  • 1/2 teaspoon kosher salt (for tzatziki sauce)
  • 1/8 teaspoon black pepper (for tzatziki sauce)
  • 1 tablespoon lemon juice (for tzatziki sauce)
  • 1 cucumber, peeled and grated (for tzatziki sauce)

Instructions

  1. If using wooden skewers, soak them in water for 30 minutes.
  2. In a bowl, combine salt, yogurt, garlic, oregano, black pepper, lemon juice, and olive oil. Add chicken and coat evenly.
  3. Marinate in the fridge for 30 minutes to 1 hour (up to 4 hours for more flavor).
  4. Squeeze excess water from the grated cucumber.
  5. Mix cucumber with yogurt, garlic, salt, pepper, and lemon juice. Chill until serving.
  6. Preheat grill to medium-high heat.
  7. Thread chicken onto skewers, alternating with lemon slices.
  8. Brush grill with olive oil. Grill skewers for 5–7 minutes per side, until chicken reaches 165°F and is cooked through.
  9. Serve hot with chilled tzatziki. Pair with pita, salad, or rice for a complete meal.

  • Tzatziki can be made a day in advance.
  • Adjust marinating time depending on how deep you want the flavors.
  • For added flavor, grill some extra lemon slices alongside the chicken.
