  • 1 teaspoon lemon juice
  • 1 tablespoon extra virgin olive oil (plus more for grilling)
  • 2 lemons, thinly sliced
  • 1 cup plain yogurt (for tzatziki)
  • 2 cloves garlic, minced (for tzatziki)
  • ½ teaspoon kosher salt (for tzatziki)
  • ⅛ teaspoon black pepper (for tzatziki)
  • 1 tablespoon lemon juice (for tzatziki)
  • 1 cucumber, peeled and grated

Instructions

  1. Prepare Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. Marinate the Chicken: In a bowl, combine salt, yogurt, garlic, oregano, black pepper, lemon juice, and olive oil. Cut chicken into large chunks and coat well in the marinade. Cover and refrigerate for 30 minutes to 1 hour.
  3. Make the Tzatziki: Squeeze excess moisture from grated cucumber using a clean kitchen towel. In a bowl, mix yogurt, garlic, salt, pepper, lemon juice, and cucumber. Cover and refrigerate until ready to serve.
  4. Preheat Grill: Preheat grill to medium-high heat and lightly brush grates with oil.
  5. Assemble Skewers: Thread marinated chicken onto skewers, alternating with thin lemon slices.
  6. Grill: Grill skewers for 5–7 minutes per side, turning occasionally, until chicken is fully cooked (internal temperature 165°F / 74°C).
  7. Serve: Serve hot with chilled tzatziki sauce on the side.

Notes

  • Marinate chicken up to 4 hours for deeper flavor.
  • Serve with warm pita bread, rice, or a Greek salad for a complete meal.
  • Tzatziki can be prepared a day in advance and stored in the refrigerator.
