  • 2 cans (28 oz each) whole canned tomatoes (with liquid)
  • 3 cups low-sodium vegetable broth
  • 1½ cups cottage cheese (2% milk fat)
  • Pepper, to taste
  • Optional garnish: grated Parmesan, fresh basil

Instructions

  1. In a large pot over medium heat, add olive oil. Add diced onion and cook for 4–5 minutes until softened.
  2. Stir in minced garlic and cook for 1 minute. Add salt. If needed, deglaze the pot with a splash of vegetable broth.
  3. Stir in tomato paste and cook for 1 minute. Add sugar and dried basil, mixing well.
  4. Add canned tomatoes (with their liquid) and vegetable broth. Cover and simmer for 20 minutes, stirring occasionally. Adjust salt if needed.
  5. Carefully transfer the soup to a blender along with cottage cheese. Blend until smooth. Work in batches if necessary and allow steam to escape safely while blending hot liquid.
  6. Serve warm, topped with Parmesan, basil, and freshly cracked pepper if desired.
