Description

Delicious hibachi chicken served with fried rice.


Ingredients

  • 1 lb chicken breast, diced
  • 2 cups cooked rice
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add diced chicken and cook until browned.
  3. Add soy sauce and sesame oil, stir well.
  4. Push chicken to one side of the skillet.
  5. Add beaten eggs and scramble until cooked.
  6. Add cooked rice and mixed vegetables, stir to combine.
  7. Cook for an additional 3-5 minutes, stirring occasionally.
  8. Garnish with green onions and serve hot.

Notes

  • Use leftover rice for best results.
  • Adjust soy sauce to taste.
  • Add more vegetables if desired.
