Homemade Sourdough Cinnamon Toast Crunch Cereal is a delightful and crunchy treat that combines the tang of sourdough with sweet cinnamon flavors.

- 220 g (1½ cups + 1 tbsp) all-purpose flour
- 55 g (¼ cup) sugar
- 6 g (1 tbsp) ground cinnamon
- 3 g (½ tsp) salt
- 113 g (½ cup) cold or frozen butter
- 120 g (½ cup) sourdough discard (or active starter, same weight)
- 4 g (1 tsp) vanilla extract
- Cold water, as needed
- 57 g (¼ cup) butter, melted (for topping)
- 110 g (½ cup) sugar (for topping)
- 6 g (1 tbsp) ground cinnamon (for topping)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a small bowl, mix sugar and cinnamon for the topping. Set aside.
- In a food processor (or bowl with pastry cutter), combine flour, sugar, cinnamon, and salt. Add cubed cold butter and pulse until pea-sized.
- Add sourdough discard and vanilla. Mix until dough begins to form. If crumbly, add cold water 1 tbsp at a time until it comes together.
- Turn dough onto a floured surface and cut in half.
- Roll each half into a thin rectangle, about ⅛ inch thick. Thinner dough yields crunchier cereal.
- Transfer to the baking sheet. Brush with melted butter and generously sprinkle with cinnamon sugar.
- Use a pizza cutter to cut into small squares. Separate pieces about ½ inch apart.
- Bake for 15–20 minutes until golden brown. Cool completely to crisp.
- Serve with milk or enjoy as a crunchy snack.
Notes
- Store in an airtight container at room temperature up to 1 week.
- For a whole grain option, replace up to half the flour with whole wheat; add a little extra water if needed.
- Also great as an ice cream topping or snack like cinnamon crackers.
