Ingredients

  • 220 g (1½ cups + 1 tbsp) all-purpose flour
  • 55 g (¼ cup) sugar
  • 6 g (1 tbsp) ground cinnamon
  • 3 g (½ tsp) salt
  • 113 g (½ cup) cold or frozen butter
  • 120 g (½ cup) sourdough discard (or active starter, same weight)
  • 4 g (1 tsp) vanilla extract
  • Cold water, as needed
  • 57 g (¼ cup) butter, melted (for topping)
  • 110 g (½ cup) sugar (for topping)
  • 6 g (1 tbsp) ground cinnamon (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix sugar and cinnamon for the topping. Set aside.
  3. In a food processor (or bowl with pastry cutter), combine flour, sugar, cinnamon, and salt. Add cubed cold butter and pulse until pea-sized.
  4. Add sourdough discard and vanilla. Mix until dough begins to form. If crumbly, add cold water 1 tbsp at a time until it comes together.
  5. Turn dough onto a floured surface and cut in half.
  6. Roll each half into a thin rectangle, about ⅛ inch thick. Thinner dough yields crunchier cereal.
  7. Transfer to the baking sheet. Brush with melted butter and generously sprinkle with cinnamon sugar.
  8. Use a pizza cutter to cut into small squares. Separate pieces about ½ inch apart.
  9. Bake for 15–20 minutes until golden brown. Cool completely to crisp.
  10. Serve with milk or enjoy as a crunchy snack.

Notes

  • Store in an airtight container at room temperature up to 1 week.
  • For a whole grain option, replace up to half the flour with whole wheat; add a little extra water if needed.
  • Also great as an ice cream topping or snack like cinnamon crackers.
