Ingredients

  • ¾1 cup plain Greek yogurt (or dairy-free alternative)
  • 2 tablespoons yellow mustard
  • 2 tablespoons dijon mustard
  • 23 tablespoons honey
  • 1 teaspoon lemon zest
  • Pinch kosher salt and ground black pepper
  • 4 boneless skinless chicken breasts
  • ¼ cup soy sauce (or tamari or coconut aminos)
  • 2 tablespoons extra virgin olive oil (or avocado oil)
  • 2 teaspoons worcestershire sauce
  • 2 teaspoons garlic, minced
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • ⅛ teaspoon kosher salt
  • ⅛ teaspoon ground black pepper
  • 4 cups romaine lettuce, chopped
  • 1 ½ cups blueberries
  • 1 cup gorgonzola cheese, crumbled (optional for dairy-free)
  • 1 cup slivered almonds
  • 1 cup cooked beef, crumbled or finely chopped
  • ½ cup dried cranberries or cherries

Instructions

  1. Combine dressing ingredients in a wide-mouth mason jar or small bowl.
  2. Shake or whisk until fully combined. Adjust sweetness if desired.
  3. Store in refrigerator until ready to use.
  4. Whisk together soy sauce, olive oil, worcestershire sauce, garlic, lemon juice, lemon zest, salt, and pepper.
  5. Pour over chicken and marinate in an airtight container in the refrigerator for at least 30 minutes.
  6. Heat grill to medium (≈400℉) and clean grates.
  7. Remove chicken from marinade, letting excess drip off.
  8. Cook on direct heat for 4-5 minutes per side.
  9. Move to indirect heat and cook for an additional 5-7 minutes, until the internal temperature reaches 160℉.
  10. Remove chicken from grill and let rest for 5 minutes.
  11. Cut into bite-sized pieces or slices.
  12. Divide lettuce, chicken, beef, almonds, blueberries, gorgonzola (if using), and dried cranberries between 4 bowls.
  13. Drizzle with dressing.
  14. Enjoy immediately.

Notes

  • Dairy-Free: Use unsweetened dairy-free yogurt and omit gorgonzola.
  • Marinade is optional; salt and pepper on chicken works fine.
  • Chicken thighs can be substituted for breasts.
