A flavorful and healthy Honey Mustard Chicken Salad that combines grilled chicken, fresh vegetables, and a creamy dressing.
Ingredients

- ¾ – 1 cup plain Greek yogurt (or dairy-free alternative)
- 2 tablespoons yellow mustard
- 2 tablespoons dijon mustard
- 2–3 tablespoons honey
- 1 teaspoon lemon zest
- Pinch kosher salt and ground black pepper
- 4 boneless skinless chicken breasts
- ¼ cup soy sauce (or tamari or coconut aminos)
- 2 tablespoons extra virgin olive oil (or avocado oil)
- 2 teaspoons worcestershire sauce
- 2 teaspoons garlic, minced
- 1 teaspoon lemon juice
- 1 teaspoon lemon zest
- ⅛ teaspoon kosher salt
- ⅛ teaspoon ground black pepper
- 4 cups romaine lettuce, chopped
- 1 ½ cups blueberries
- 1 cup gorgonzola cheese, crumbled (optional for dairy-free)
- 1 cup slivered almonds
- 1 cup cooked beef, crumbled or finely chopped
- ½ cup dried cranberries or cherries
Instructions
- Combine dressing ingredients in a wide-mouth mason jar or small bowl.
- Shake or whisk until fully combined. Adjust sweetness if desired.
- Store in refrigerator until ready to use.
- Whisk together soy sauce, olive oil, worcestershire sauce, garlic, lemon juice, lemon zest, salt, and pepper.
- Pour over chicken and marinate in an airtight container in the refrigerator for at least 30 minutes.
- Heat grill to medium (≈400℉) and clean grates.
- Remove chicken from marinade, letting excess drip off.
- Cook on direct heat for 4-5 minutes per side.
- Move to indirect heat and cook for an additional 5-7 minutes, until the internal temperature reaches 160℉.
- Remove chicken from grill and let rest for 5 minutes.
- Cut into bite-sized pieces or slices.
- Divide lettuce, chicken, beef, almonds, blueberries, gorgonzola (if using), and dried cranberries between 4 bowls.
- Drizzle with dressing.
- Enjoy immediately.
Notes
- Dairy-Free: Use unsweetened dairy-free yogurt and omit gorgonzola.
- Marinade is optional; salt and pepper on chicken works fine.
- Chicken thighs can be substituted for breasts.
