- 1 tablespoon extra virgin olive oil
- 2 tablespoons melted butter
- Juice and zest of 1 lemon
- 1/4 cup honey
Instructions
- Preheat oven to 425°F (220°C).
- In a large mixing bowl, toss the chopped sweet potatoes with olive oil, melted butter, lemon juice, lemon zest, and honey until evenly coated.
- Line a baking sheet with parchment paper.
- Spread the sweet potatoes in a single, even layer.
- Roast for about 25 minutes, stirring halfway through, until tender and golden brown on the edges.
- Allow to cool slightly before serving.
Notes
- For extra caramelization, broil for the last 2–3 minutes.
- Sprinkle with a pinch of cinnamon or chili flakes for added flavor.
- Make sure potatoes are spread out to prevent steaming.
