Korean Potato Salad (Gamja Salad) is a creamy and flavorful dish made with potatoes, vegetables, and a light dressing.
Ingredients

- 2 cups rolled oats
- 4 tablespoons chia seeds
- 4 teaspoons matcha powder
- 1 pinch salt
- 1 teaspoon vanilla extract
- 2–3 tablespoons maple syrup
- 1 cup yogurt
- 2 cups milk
Instructions
- In a large bowl, combine rolled oats, chia seeds, yogurt, milk, vanilla extract, salt, matcha powder, and maple syrup.
- Stir until well combined.
- Cover and refrigerate for at least 4 hours, preferably overnight. You can also portion into individual containers.
- Serve chilled and top with your favorite fruits, berries, or nuts for added texture.
Notes
- Adjust sweetness with more or less maple syrup.
- Can use dairy or non-dairy milk and yogurt.
- Great for meal prep—keeps in the fridge up to 5 days.
