Ingredients

  • 8 ounces pasta (spaghetti or linguine)
  • 3 tablespoons butter, divided
  • 1 clove garlic, minced
  • 1 tablespoon all-purpose flour
  • 1/2 cup reserved pasta water
  • 1 teaspoon chicken soup base
  • 23 tablespoons fresh lemon juice (to taste)
  • 1 tablespoon capers, drained
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Bring a large pot of lightly salted water to a boil.
  2. Cook pasta until al dente, about 8–10 minutes.
  3. Reserve 1/2 cup pasta water, then drain pasta.
  4. In a skillet over medium heat, melt 1 tablespoon butter.
  5. Add garlic and cook for about 1 minute, until fragrant.
  6. Add remaining butter and allow it to melt.
  7. Sprinkle in flour and whisk continuously for about 1 minute.
  8. Dissolve chicken soup base into the reserved pasta water.
  9. Gradually pour into the skillet while whisking until smooth.
  10. Whisk in lemon juice to taste.
  11. Stir in capers and parsley.
  12. Season with salt and pepper.
  13. Simmer for 2 minutes until slightly thickened.
  14. Toss drained pasta into the sauce until well coated.
  15. Serve immediately.

  • Add grilled chicken or shrimp for extra protein.
  • A sprinkle of grated Parmesan pairs beautifully with the lemon flavor.
