Ingredients

  • 1/4 cup granulated sugar
  • 1 tablespoon lemon zest
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 4 ounces cream cheese, cold and cut into pieces
  • 6 tablespoons unsalted butter, cold and cut into pieces
  • 2 large eggs, cold
  • 1/3 cup whole milk, cold
  • 1 tablespoon fresh lemon juice
  • 1 cup powdered sugar (for glaze)
  • 1 teaspoon lemon zest (for glaze)
  • 2 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, combine granulated sugar and lemon zest. Rub together until fragrant.
  3. Add flour, baking powder, and salt. Whisk to combine and set aside.
  4. In a food processor fitted with a metal blade, pulse cream cheese, butter, and eggs 6–8 times until combined. Scrape down the bowl.
  5. Add the dry ingredients, milk, and lemon juice. Pulse 3–5 more times until the dough comes together.
  6. Turn dough onto a lightly floured surface. Fold a few times to smooth (do not overwork).
  7. Divide dough in half. Form each half into a 6-inch disk. Cut each disk into triangles with a bench scraper or knife.
  8. Place triangles on the prepared baking sheet.
  9. Bake 15 minutes or until scones rise and turn golden. Transfer to a wire rack to cool completely.
  10. In a medium bowl, whisk powdered sugar, lemon zest, and lemon juice until smooth.
  11. Drizzle over cooled scones and serve.

Notes

  • For extra lemon flavor, add more zest to the glaze.
  • Do not overwork the dough to keep scones tender.
  • Scones are best eaten the day they are baked but can be stored in an airtight container for 1–2 days.
