Mango Shrimp Ceviche is a refreshing dish combining shrimp and fresh ingredients.
Ingredients

- 1 pound cooked large shrimp, cut into bite-sized pieces
- 1 cucumber, cut into bite-sized pieces
- 1 pint cherry tomatoes, halved
- 1 jalapeño pepper, thinly sliced
- 1 fresh mango, peeled, pitted, and cut into bite-sized pieces
- 1 lime, juiced (or more to taste)
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon chili lime seasoning (such as Tajín®), or to taste
Instructions
- In a large bowl, mix together shrimp, cucumber, cherry tomatoes, jalapeño, mango, lime juice, cilantro, and chili lime seasoning.
- Taste and add more chili lime seasoning or lime juice if desired.
- For enhanced flavor, cover and refrigerate for 1 hour before serving.
- Serve chilled as a light main dish, over greens, or with tortilla chips.
Notes
- Remove jalapeño seeds for less heat.
- Add diced avocado for extra creaminess.
- Best enjoyed fresh but can be refrigerated for up to 1 day.
