Ingredients

  • 1 cucumber, cut into bite-sized pieces
  • 1 pint cherry tomatoes, halved
  • 1 jalapeño pepper, thinly sliced
  • 1 fresh mango, peeled, pitted, and cut into bite-sized pieces
  • 1 lime, juiced (or more to taste)
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon chili lime seasoning (such as Tajín®), or to taste

Instructions

  1. In a large bowl, mix together shrimp, cucumber, cherry tomatoes, jalapeño, mango, lime juice, cilantro, and chili lime seasoning.
  2. Taste and add more chili lime seasoning or lime juice if desired.
  3. For enhanced flavor, cover and refrigerate for 1 hour before serving.
  4. Serve chilled as a light main dish, over greens, or with tortilla chips.

Notes

  • Remove jalapeño seeds for less heat.
  • Add diced avocado for extra creaminess.
  • Best enjoyed fresh but can be refrigerated for up to 1 day.
