Description
Delicious Mississippi Mud Brownies with gooey marshmallows and rich chocolate frosting.
Ingredients

- 1/3 cup unsweetened cocoa powder
- 1/2 cup oil (vegetable or canola)
- 1/2 cup butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon salt
- 3 cups mini marshmallows
- 1/2 cup butter, melted (for frosting)
- 1/3 cup unsweetened cocoa powder (for frosting)
- 1/3 cup evaporated milk (for frosting)
- 1 teaspoon vanilla extract (for frosting)
- 3 to 3 1/2 cups powdered sugar (for frosting)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch pan.
- In a large bowl, mix cocoa powder with oil.
- Add softened butter and mix until smooth.
- Add sugar and mix for about 1 minute.
- Add eggs one at a time, mixing after each addition. Stir in vanilla.
- Add flour and salt and mix until combined.
- Pour batter into prepared pan and bake for 25–30 minutes, until a toothpick inserted in the center comes out clean.
- Remove from oven, sprinkle marshmallows evenly over top, and return to oven for 2–3 minutes until marshmallows puff.
- Allow brownies to cool completely before frosting.
- In a bowl, combine melted butter, cocoa powder, evaporated milk, vanilla, and 2 cups powdered sugar. Beat until smooth.
- Gradually add more powdered sugar until desired consistency is reached (about 3 1/4 cups).
- Spread frosting over cooled brownies and cut into squares.
Notes
- Use a plastic knife for cleaner cuts.
- Optional: Add 1 cup chopped nuts for extra texture.
- Brownies are even better the next day and easier to slice.
- Frosting can be made up to 2 weeks ahead and refrigerated.
- Brownies can be frozen (frosted or unfrosted) for up to 3 months.
