Description

Delicious Mississippi Mud Brownies with gooey marshmallows and rich chocolate frosting.


Ingredients

  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup oil (vegetable or canola)
  • 1/2 cup butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 3 cups mini marshmallows
  • 1/2 cup butter, melted (for frosting)
  • 1/3 cup unsweetened cocoa powder (for frosting)
  • 1/3 cup evaporated milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 3 to 3 1/2 cups powdered sugar (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch pan.
  2. In a large bowl, mix cocoa powder with oil.
  3. Add softened butter and mix until smooth.
  4. Add sugar and mix for about 1 minute.
  5. Add eggs one at a time, mixing after each addition. Stir in vanilla.
  6. Add flour and salt and mix until combined.
  7. Pour batter into prepared pan and bake for 25–30 minutes, until a toothpick inserted in the center comes out clean.
  8. Remove from oven, sprinkle marshmallows evenly over top, and return to oven for 2–3 minutes until marshmallows puff.
  9. Allow brownies to cool completely before frosting.
  10. In a bowl, combine melted butter, cocoa powder, evaporated milk, vanilla, and 2 cups powdered sugar. Beat until smooth.
  11. Gradually add more powdered sugar until desired consistency is reached (about 3 1/4 cups).
  12. Spread frosting over cooled brownies and cut into squares.

Notes

  • Use a plastic knife for cleaner cuts.
  • Optional: Add 1 cup chopped nuts for extra texture.
  • Brownies are even better the next day and easier to slice.
  • Frosting can be made up to 2 weeks ahead and refrigerated.
