Description

No-bake cookies made with chocolate, peanut butter, and oats.


Ingredients

  • ½ cup unsalted butter, cut into tablespoon pieces
  • 2 cups granulated sugar
  • ½ cup milk
  • ¼ cup unsweetened cocoa powder
  • ½ cup creamy peanut butter
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon kosher salt
  • 3 cups quick oats

Instructions

  1. Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
  2. In a medium saucepan over medium heat, combine the butter, sugar, milk, and cocoa powder. Stir occasionally and bring to a rolling boil.
  3. Once boiling across the entire surface, let it boil for exactly 1 minute.
  4. Remove from heat and immediately stir in the peanut butter, vanilla, and salt until smooth.
  5. Stir in the quick oats until fully coated.
  6. Drop spoonfuls of the mixture (about 2 tablespoons each) onto the prepared baking sheets.
  7. Let the cookies sit at room temperature for 20–30 minutes, until cooled and set.
