Description

One Pan Honey Garlic Chicken and Vegetables is a simple and flavorful meal made with chicken breasts, potatoes, and green beans, all roasted in a sweet and savory glaze.


Ingredients

  • Glaze:
  • 2 Tbsp olive oil
  • 2 Tbsp unsalted butter, melted
  • 2 Tbsp honey
  • 2 Tbsp brown sugar
  • 1 Tbsp Dijon mustard
  • 1½ tsp minced garlic (about 3 cloves)
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • Salt and pepper, to taste
  • Other Ingredients:
  • 4 large boneless, skinless chicken breasts
  • 16 oz red potatoes, cut into 1-inch pieces
  • 1 Tbsp olive oil
  • Salt and pepper, to taste
  • 12 oz frozen green beans (or 16 oz fresh or frozen broccoli florets)
  • 2 Tbsp chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a rimmed baking sheet.
  2. In a small bowl, whisk together all glaze ingredients. Season with salt and pepper and set aside.
  3. Arrange potatoes on one half of the baking sheet. Drizzle with olive oil and season with salt and pepper.
  4. Place chicken breasts on the other half of the baking sheet and season with salt and pepper. Spoon half of the glaze over the chicken.
  5. Roast for 20 minutes.
  6. Remove from oven, add green beans to the potatoes, and toss with the remaining glaze.
  7. Move oven rack to the top position and return pan to oven. Broil for 5–10 minutes until caramelized, potatoes are fork-tender, and chicken reaches 165°F (74°C).
  8. Garnish with parsley if desired and serve hot.

Notes

  • If concerned about potatoes cooking through, roast them alone for 10 minutes before adding the chicken.
  • The recipe is easy to customize with different vegetables or meats such as beef steaks or beef strips.
  • For even browning, avoid overcrowding the pan.
