One Pan Honey Garlic Chicken and Vegetables is a simple and flavorful meal made with chicken breasts, potatoes, and green beans, all roasted in a sweet and savory glaze.

- Glaze:
- 2 Tbsp olive oil
- 2 Tbsp unsalted butter, melted
- 2 Tbsp honey
- 2 Tbsp brown sugar
- 1 Tbsp Dijon mustard
- 1½ tsp minced garlic (about 3 cloves)
- ½ tsp dried oregano
- ½ tsp dried basil
- Salt and pepper, to taste
- Other Ingredients:
- 4 large boneless, skinless chicken breasts
- 16 oz red potatoes, cut into 1-inch pieces
- 1 Tbsp olive oil
- Salt and pepper, to taste
- 12 oz frozen green beans (or 16 oz fresh or frozen broccoli florets)
- 2 Tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a rimmed baking sheet.
- In a small bowl, whisk together all glaze ingredients. Season with salt and pepper and set aside.
- Arrange potatoes on one half of the baking sheet. Drizzle with olive oil and season with salt and pepper.
- Place chicken breasts on the other half of the baking sheet and season with salt and pepper. Spoon half of the glaze over the chicken.
- Roast for 20 minutes.
- Remove from oven, add green beans to the potatoes, and toss with the remaining glaze.
- Move oven rack to the top position and return pan to oven. Broil for 5–10 minutes until caramelized, potatoes are fork-tender, and chicken reaches 165°F (74°C).
- Garnish with parsley if desired and serve hot.
Notes
- If concerned about potatoes cooking through, roast them alone for 10 minutes before adding the chicken.
- The recipe is easy to customize with different vegetables or meats such as beef steaks or beef strips.
- For even browning, avoid overcrowding the pan.
