Ingredients

- 2 cups cooked rice
- 1 cup orange chicken, diced
- 1/2 cup peas and carrots
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions, chopped
- 1 tablespoon orange zest
Instructions
- Heat sesame oil in a large pan over medium heat.
- Add peas and carrots, and sauté until tender.
- Push vegetables to the side and add beaten eggs, scrambling until cooked.
- Add cooked rice and orange chicken to the pan.
- Pour soy sauce and mix thoroughly.
- Add orange zest and green onions, stir well, and cook for another 2 minutes.
- Serve hot.
Notes
- Use day-old rice for better texture.
- Adjust soy sauce to taste.
- Add more vegetables if desired.
