Description

Delicious Peanut Butter Cup Cake Roll filled with creamy peanut butter and topped with chocolate ganache.


Ingredients

  • 3 large eggs
  • ¾ cup (150g) granulated sugar
  • 2 teaspoons brewed coffee or water
  • 1 teaspoon vanilla extract
  • ¼ cup (20g) unsweetened cocoa powder
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ¾ cup (93g) all-purpose flour
  • Powdered sugar to aid in rolling
  • 2 ounces (113g) cream cheese softened
  • ⅓ cup (89g) peanut butter
  • 1 cup (113g) powdered sugar
  • 1 teaspoon vanilla extract
  • 4 tablespoons + ⅔ cup (59ml + 158ml) heavy whipping cream
  • 7 regular size Reese’s peanut butter cups chopped (about 1 cup chopped)
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F. Line a jelly roll (10×15”) pan with foil and spray with cooking spray.
  2. Beat eggs at high speed for 3 minutes until frothy. Beat in sugar, coffee or water, and vanilla extract.
  3. Mix in cocoa, salt, and baking powder, then mix in flour. Stir until blended.
  4. Spread batter in prepared pan. Bake for 10-15 minutes until slightly bounces back when poked.
  5. Turn cake over onto a kitchen towel sprinkled with powdered sugar. Roll cake in the towel and let cool.
  6. Beat cream cheese and peanut butter until smooth. Mix in powdered sugar, vanilla, and heavy whipping cream until spreadable.
  7. Unroll the cooled cake and spread filling, leaving 1” at both ends. Re-roll cake and chill.
  8. Microwave chocolate chips and heavy whipping cream until smooth. Chill until thickened.
  9. Place cake roll on a rack over a cookie sheet. Pour ganache over the cake and top with remaining chopped peanut butter cups. Chill until set.
  10. Slice and serve.
