Delicious pumpkin pudding shots perfect for fall gatherings.
Ingredients

- 2 cups milk
- 1 cup RumChata
- 6 ounces pumpkin spice instant pudding mix
- 8 oz Cool Whip, thawed to room temperature
- Whipped cream (for topping)
- Fall sprinkles (for topping)
- 24 (2-oz) plastic cups
Instructions
- In a large bowl, add the pumpkin spice instant pudding mix.
- In a separate measuring cup or bowl, whisk together the milk and RumChata.
- Pour the milk mixture into the pudding mix and whisk for about 2 minutes until thickened. (You can use an electric mixer if preferred.)
- Gently fold in the Cool Whip until fully incorporated. Be careful not to overmix.
- Using a small cookie scoop or spoon, divide the mixture evenly into 2-oz plastic cups.
- Refrigerate for 2 hours (or freeze for 1 hour) until set.
- Before serving, top with whipped cream and fall sprinkles.
Notes
- Substitute RumChata with vanilla vodka, Baileys Irish Cream, or Fireball if desired.
- Sprinkle crushed graham crackers, pumpkin spice, or cinnamon on top for extra flavor.
- Store covered in the refrigerator for up to 4 days.
