Ingredients

  • 1 cup RumChata
  • 6 ounces pumpkin spice instant pudding mix
  • 8 oz Cool Whip, thawed to room temperature
  • Whipped cream (for topping)
  • Fall sprinkles (for topping)
  • 24 (2-oz) plastic cups

Instructions

  1. In a large bowl, add the pumpkin spice instant pudding mix.
  2. In a separate measuring cup or bowl, whisk together the milk and RumChata.
  3. Pour the milk mixture into the pudding mix and whisk for about 2 minutes until thickened. (You can use an electric mixer if preferred.)
  4. Gently fold in the Cool Whip until fully incorporated. Be careful not to overmix.
  5. Using a small cookie scoop or spoon, divide the mixture evenly into 2-oz plastic cups.
  6. Refrigerate for 2 hours (or freeze for 1 hour) until set.
  7. Before serving, top with whipped cream and fall sprinkles.
