Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, combine oil, buttermilk, eggs, food coloring, and vanilla.
  4. Gradually add the wet ingredients to the dry ingredients.
  5. Drop dough by tablespoons onto baking sheets.
  6. Bake for 10-12 minutes. Let cool.
  7. In a bowl, mix cream cheese, powdered sugar, and vanilla for the filling.
  8. Spread filling between two cookies to create sandwiches.
