Ingredients

  • 1 tablespoon dark soy sauce
  • 4 tablespoons brown sugar (or to taste)
  • 2 tablespoons mirin (use a non-alcoholic version)
  • 1 small onion, grated
  • 4 cloves garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 2 (350 g each) blocks extra-firm tofu
  • 1 tablespoon sesame oil
  • Optional garnish: sesame seeds, sliced green onions

Instructions

  1. Press the tofu: Wrap tofu in paper towels and place something heavy on top to press out excess moisture. Let sit for at least 15–20 minutes.
  2. Prepare the sauce: In a small bowl, mix together low-sodium soy sauce, dark soy sauce, mirin, brown sugar, grated onion, minced garlic, salt, and pepper. Stir until sugar dissolves.
  3. Tear the tofu: Once pressed, tear tofu into bite-sized pieces. Keep some chunks larger and crumble some smaller for varied texture.
  4. Cook the tofu: Heat sesame oil in a skillet over medium heat. Add tofu in a single layer and let cook undisturbed for 1–2 minutes until the bottom turns golden. Stir and repeat until evenly golden and slightly crispy.
  5. Add the sauce: Pour the prepared sauce over the tofu. Cook for about 5 minutes, stirring occasionally, until the sauce reduces and coats the tofu.
  6. Serve: Serve immediately and garnish with sesame seeds and green onions if desired.

Notes

  • Tearing tofu instead of cutting creates more textured edges for better sauce absorption.
  • Adjust brown sugar for sweetness preference.
  • Serve over rice or noodles for a complete meal.
