- 6 tablespoons low-sodium soy sauce
- 1 tablespoon dark soy sauce
- 4 tablespoons brown sugar (or to taste)
- 2 tablespoons mirin (use a non-alcoholic version)
- 1 small onion, grated
- 4 cloves garlic, minced
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 2 (350 g each) blocks extra-firm tofu
- 1 tablespoon sesame oil
- Optional garnish: sesame seeds, sliced green onions
Instructions
- Press the tofu: Wrap tofu in paper towels and place something heavy on top to press out excess moisture. Let sit for at least 15–20 minutes.
- Prepare the sauce: In a small bowl, mix together low-sodium soy sauce, dark soy sauce, mirin, brown sugar, grated onion, minced garlic, salt, and pepper. Stir until sugar dissolves.
- Tear the tofu: Once pressed, tear tofu into bite-sized pieces. Keep some chunks larger and crumble some smaller for varied texture.
- Cook the tofu: Heat sesame oil in a skillet over medium heat. Add tofu in a single layer and let cook undisturbed for 1–2 minutes until the bottom turns golden. Stir and repeat until evenly golden and slightly crispy.
- Add the sauce: Pour the prepared sauce over the tofu. Cook for about 5 minutes, stirring occasionally, until the sauce reduces and coats the tofu.
- Serve: Serve immediately and garnish with sesame seeds and green onions if desired.
Notes
- Tearing tofu instead of cutting creates more textured edges for better sauce absorption.
- Adjust brown sugar for sweetness preference.
- Serve over rice or noodles for a complete meal.
