Description
Delicious seven layer bars made with dairy-free ingredients.
Ingredients
- Dairy-free sweetened condensed coconut milk (11.25 oz can) – 1 can
- Dairy-free chocolate chips – 3/4 cup
- Pistachios, shelled & crushed – 1/2 cup
- Walnuts, crushed – 1/2 cup
- Unsweetened coconut flakes – 1/3 cup
- Graham crackers, crushed – 1 1/4 cups
- Vegan butter, melted (measure solid, not melted) – 1/2 cup
Instructions
- Preheat oven to 350°F (175°C).
- Line an 8×8 or 9×9-inch baking pan with parchment paper, leaving overhang on two sides for easy removal.
- Mix crushed graham crackers and melted vegan butter in a bowl.
- Press firmly into the bottom of the lined pan.
- Bake for 10 minutes.
- Let cool (chill in fridge for 10 minutes to speed up cooling).
- Sprinkle coconut flakes, chocolate chips, pistachios, and walnuts evenly over the crust (reserve a small amount for topping).
- Pour sweetened condensed coconut milk evenly over everything.
- Sprinkle reserved toppings on top.
- Bake at 350°F (175°C) for 25–30 minutes, until edges are lightly golden.
- Cool completely.
- Refrigerate preferably overnight to fully set.
- Lift out using parchment and cut into squares.
Notes
- If the crust feels too wet, add a bit more crushed graham cracker.
- Use gluten-free graham crackers if desired.
- Bars slice cleaner when fully chilled.
