Description

Delicious seven layer bars made with dairy-free ingredients.


Ingredients

  • Dairy-free sweetened condensed coconut milk (11.25 oz can) – 1 can
  • Dairy-free chocolate chips – 3/4 cup
  • Pistachios, shelled & crushed – 1/2 cup
  • Walnuts, crushed – 1/2 cup
  • Unsweetened coconut flakes – 1/3 cup
  • Graham crackers, crushed – 1 1/4 cups
  • Vegan butter, melted (measure solid, not melted) – 1/2 cup

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line an 8×8 or 9×9-inch baking pan with parchment paper, leaving overhang on two sides for easy removal.
  3. Mix crushed graham crackers and melted vegan butter in a bowl.
  4. Press firmly into the bottom of the lined pan.
  5. Bake for 10 minutes.
  6. Let cool (chill in fridge for 10 minutes to speed up cooling).
  7. Sprinkle coconut flakes, chocolate chips, pistachios, and walnuts evenly over the crust (reserve a small amount for topping).
  8. Pour sweetened condensed coconut milk evenly over everything.
  9. Sprinkle reserved toppings on top.
  10. Bake at 350°F (175°C) for 25–30 minutes, until edges are lightly golden.
  11. Cool completely.
  12. Refrigerate preferably overnight to fully set.
  13. Lift out using parchment and cut into squares.

Notes

  • If the crust feels too wet, add a bit more crushed graham cracker.
  • Use gluten-free graham crackers if desired.
  • Bars slice cleaner when fully chilled.
