- 1¼ cups yellow cornmeal

- 1 teaspoon granulated sugar
- 1 teaspoon salt
- 2 cups milk
- 3 tablespoons vegetable or canola oil
- 2 large eggs
- Your favorite chili, for serving
- Optional toppings: Shredded cheese, Sour cream, Chopped green onion
Instructions
- Preheat waffle iron.
- In a large bowl, whisk together flour, cornmeal, baking powder, sugar, and salt.
- Stir in milk, oil, and eggs until the batter is smooth. Do not overmix.
- Spray waffle iron with non-stick spray. Pour batter onto the hot iron and cook in batches according to your waffle maker’s instructions, until golden and crisp.
- Top waffles with warm chili and your favorite toppings like cheese, sour cream, and green onions.
