Ingredients

  • 1 lb chicken breasts
  • 5 medium potatoes, chopped into bite-sized pieces
  • 2 tablespoons olive oil
  • Salt, pepper, garlic powder, and paprika (for seasoning potatoes)
  • Chicken Seasoning:
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons minced garlic
  • Garlic Parmesan sauce (enough to coat chicken thoroughly)
  • 1 cup shredded mozzarella cheese

Instructions

  1. Wash and chop potatoes into bite-sized pieces.
  2. Toss with olive oil, salt, pepper, garlic powder, and paprika.
  3. Place seasoned potatoes in the bottom of the slow cooker.
  4. Season chicken breasts with salt, pepper, paprika, onion powder, and Italian seasoning.
  5. Lay the seasoned chicken on top of the potatoes.
  6. Spread minced garlic evenly over the chicken.
  7. Pour enough Garlic Parmesan sauce over the chicken to coat thoroughly.
  8. Cover and cook on Low for 6–7 hours or High for 3–4 hours until the chicken reaches an internal temperature of 165°F (74°C) and potatoes are fork-tender.
  9. During the last 30 minutes of cooking, sprinkle shredded mozzarella over the top.
  10. Cover and allow cheese to melt completely.
  11. Serve warm. Garnish with extra Parmesan cheese or fresh herbs if desired.

  • Add broccoli or green beans during the last hour for a complete meal.
