Description

Delicious Smash Burger Tacos with a creamy burger sauce.


Ingredients

  • ½ cup mayo
  • ¼ cup ketchup
  • 1 tablespoon dill pickles, finely chopped
  • ½ teaspoon garlic powder
  • ½ teaspoon pickle juice
  • ½ teaspoon soy sauce
  • ½ teaspoon rice vinegar
  • ¼ teaspoon paprika
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon ground black pepper
  • 1 pound ground beef (80/20 recommended)
  • ¾ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 6 slices American cheese
  • 6 small flour tortillas (street taco size)
  • Shredded lettuce
  • Burger pickles
  • Crispy bacon (optional)
  • Thinly sliced white onions (optional)

Instructions

  1. In a small bowl, combine all sauce ingredients. Stir well and set aside.
  2. In a bowl, mix ground beef with salt and pepper. Divide into 6 equal balls. Set aside.
  3. Have ready: tortillas, cheese slices, lettuce & pickles, burger sauce.
  4. Preheat flat-top griddle (or large skillet) to medium-high heat. Place beef balls on the hot surface. Using a burger press, press each ball firmly until very thin (15–20 seconds per patty). Let cook about 40 seconds. Flip patties and immediately add a slice of cheese. At the same time, place tortillas on the griddle to toast. Close lid (if using a griddle with cover) and cook about 2 minutes more. Flip tortillas so both sides are lightly toasted. Using a spatula, transfer each cheesy patty directly onto a toasted tortilla.
  5. Top each taco with shredded lettuce, burger sauce, and pickles. Add bacon or onions if desired. Serve immediately while hot and crispy!

Notes

  • Testing showed that pressing raw beef directly onto tortillas caused soggy tortillas and uneven cooking. Cooking separately gives the best texture.
  • You can use a large skillet — using two pans helps cook burgers and tortillas at the same time.
  • Use a sturdy spatula and press with a heavy object (like a can). Patty paper helps prevent sticking but isn’t required.
