Ingredients

  • 14 tablespoons unsalted butter, room temperature
  • 1⅓ cups (180 g) powdered sugar, sifted
  • 2 teaspoons peppermint extract
  • 1 teaspoon vanilla extract
  • 1 large egg
  • ¼ cup (70 g) sourdough discard
  • 3¼ cups (455 g) all-purpose flour
  • 1 teaspoon salt
  • 1½ teaspoons red food coloring
  • Optional Peppermint Glaze: ¼ cup heavy cream
  • ¾1 cup powdered sugar
  • 1 teaspoon peppermint extract

Instructions

  1. In a stand mixer, cream butter and powdered sugar on medium speed for 2–3 minutes until light and fluffy.
  2. Add peppermint extract, vanilla extract, egg, and sourdough discard. Mix until combined, scraping the bowl as needed.
  3. Gradually add flour and salt. Mix on low until a dough forms.
  4. Divide dough into two equal portions. Shape one into a disc and wrap.
  5. Add red food coloring to the remaining dough and mix until evenly colored. Shape into a disc and wrap.
  6. Refrigerate both doughs for at least 4 hours or overnight.
  7. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  8. Pinch off 1 teaspoon from each dough. Roll into balls, then into 4-inch ropes. Twist together, pinch ends, and curve into a candy cane shape.
  9. Place on baking sheet and repeat with remaining dough. Chill briefly if dough softens.
  10. Bake for 10–12 minutes until bottoms are lightly golden. Rest on the tray for 5 minutes, then transfer to a cooling rack.
  11. Optional Glaze: Mix heavy cream, powdered sugar, and peppermint extract until smooth. Drizzle over cooled cookies.
