Strawberry Chia Pudding is a nutritious and delicious treat. It combines the richness of chia seeds with fresh strawberries for a healthy dessert.

- 8–9 large eggs
- 1 cup cottage cheese
- ½ cup shredded cheddar cheese
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- ⅓ cup cooked beef (optional)
- 2 tablespoons chives (optional)
- Cooking spray
Instructions
- Preheat oven to 350°F (175°C). Lightly spray a silicone muffin pan with cooking spray.
- Blend eggs, cottage cheese, shredded cheddar, salt, and pepper until smooth.
- Pour mixture into muffin cups, filling each slightly more than halfway.
- Top with cooked beef and chives (or other add-ins) if using.
- Bake for 20–22 minutes.
- Let cool before removing from the silicone mold.

- Store in the fridge up to 4 days or freeze for longer storage.
