Description

The Best Broccoli Potato Cheese Soup Recipe is a creamy and comforting dish that combines broccoli, potatoes, and cheese for a delicious meal.

Ingredients

Scale
  • 12 tablespoons butter
  • 1 onion, diced
  • 2 medium carrots, diced
  • 3 cloves garlic, minced
  • 4 cups chicken stock (or vegetable stock for a vegetarian option)
  • 1/4 cup cornstarch
  • 1 cup milk
  • 2 large potatoes, peeled and chopped into 1/2-inch cubes
  • 16 ounces broccoli florets (fresh or frozen)
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper

Instructions

  1. Melt butter in a skillet over medium-high heat.
  2. Sauté the diced onion until softened, about 3 minutes.
  3. Add the carrots, salt, and pepper; cook 3–4 more minutes.
  4. Add garlic and sauté for 30 seconds until fragrant.
  5. Add the potatoes and chicken stock to the skillet. Cover and bring to a simmer.
  6. Cook for about 10 minutes, or until potatoes are tender.
  7. Stir in the broccoli florets and continue simmering until both broccoli and potatoes are fork-tender, about 10 minutes.
  8. In a small bowl, whisk the cornstarch into the milk until smooth.
  9. Slowly stir this mixture into the hot soup, mixing well to thicken.
  10. Stir in the shredded cheddar until fully melted and incorporated.
  11. Serve hot, garnished with extra cheese or herbs if desired.

Notes

  • Substitute vegetable broth for a vegetarian version.
  • Use your preferred cheese for different flavors.
  • Add extra milk or broth if too thick; simmer longer if too thin.
  • Let the soup cool to room temperature before storing in an airtight container in the fridge for up to 3 days.
