Ingredients

  • 2 cups butternut squash, peeled and cubed
  • 2 cups carrots, peeled and sliced
  • 2 cups potatoes, chopped
  • 2 cups celery, chopped
  • 1 cup green lentils
  • ¾ cup yellow split peas (or replace with more lentils)
  • 1 onion, chopped
  • 5 cloves garlic, minced
  • 810 cups vegetable broth or chicken broth
  • 2 teaspoons Herbs de Provence
  • 1 teaspoon salt (plus more to taste)
  • 23 cups kale, stems removed and chopped (added at the end)
  • 1 cup parsley, chopped (added at the end)
  • ½ cup olive oil (rosemary or herb-infused oil is amazing, added at the end)
  • A splash of sherry, red wine vinegar, or lemon juice (for tang, added at the end)

Instructions

  1. Add all crockpot ingredients to the slow cooker.
  2. Cover and cook on High for 5–6 hours or Low for 7–8 hours.
  3. Scoop out about 4 cups of soup into a blender and add the olive oil. Blend until semi-smooth and creamy.
  4. Pour blended soup back into the crockpot and stir to combine.
  5. Stir in the kale and parsley. Let it sit for a few minutes to soften the greens.
  6. Taste and adjust salt. Add a splash of sherry, vinegar, or lemon juice to brighten the flavor.
  7. Serve with crusty wheat bread and Parmesan if desired.

Notes

  • For stovetop: Simmer the first group of ingredients on low for about 1 hour until lentils and squash are soft. Blend and return to pot, then add kale and parsley.
  • For Instant Pot: Use 6–7 cups broth. Cook on Soup for 30 minutes, then quick release. Blend and return, then add kale and parsley.
