Description

Delicious tiramisu-inspired cookies with a creamy filling.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon instant coffee granules
  • 1 tablespoon hot water
  • 1/2 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 2 tablespoons coffee liqueur
  • 1/4 cup cocoa powder

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter and sugar with an electric mixer until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla. Dissolve instant coffee in hot water and mix into the butter mixture.
  5. Gradually fold in the flour mixture until just combined. Avoid overmixing.
  6. Drop tablespoon-sized portions of dough onto prepared baking sheets, spacing ~2 inches apart.
  7. Bake 10-12 minutes, until edges are lightly golden but centers remain soft. Cool on baking sheets 5 minutes, then transfer to wire racks.
  8. Beat mascarpone and heavy cream until smooth. Add coffee liqueur and continue mixing until creamy.
  9. Spread mascarpone filling on the bottom of one cookie, sandwich with another. Dust the tops with cocoa powder.
  10. Refrigerate for 30 minutes to allow filling to set for a firmer texture.

Notes

  • Add an extra teaspoon of instant coffee granules for a stronger coffee flavor.
  • Cream cheese can replace mascarpone, but flavor will differ slightly.
  • Avoid overmixing the dough to keep cookies soft and tender.
  • Serve with espresso or a latte for a complete coffee experience.
