Ingredients

- 2 cups nuts (almonds, cashews, pecans, walnuts, etc.)
- ½ cup dried coconut
- ¼ cup dried cranberries
- ¼ cup pepitas (pumpkin seeds)
- 1 tablespoon chia seeds
- ¼ teaspoon sea salt
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 325°F (163°C) and line an 8×8-inch baking pan with parchment paper.
- In a large mixing bowl, combine the nuts, seeds, dried fruit, and sea salt. Stir well.
- In a small bowl, mix the maple syrup and vanilla extract. Pour over the nut mixture and stir until everything is coated evenly.
- Transfer the mixture into the prepared pan and flatten into an even layer using the back of a spoon or spatula.
- Bake for 30–35 minutes, until golden and fragrant.
- Let cool in the pan for 1 hour. Once fully cooled, slice into bars.
Notes
- Roughly chop larger nuts so smaller pieces fill gaps and help hold the bars together.
- If they remain sticky after cooling, bake a few more minutes next time to better caramelize the maple syrup.
