Ingredients

  • 2 cups nuts (almonds, cashews, pecans, walnuts, etc.)
  • ½ cup dried coconut
  • ¼ cup dried cranberries
  • ¼ cup pepitas (pumpkin seeds)
  • 1 tablespoon chia seeds
  • ¼ teaspoon sea salt
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F (163°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the nuts, seeds, dried fruit, and sea salt. Stir well.
  3. In a small bowl, mix the maple syrup and vanilla extract. Pour over the nut mixture and stir until everything is coated evenly.
  4. Transfer the mixture into the prepared pan and flatten into an even layer using the back of a spoon or spatula.
  5. Bake for 30–35 minutes, until golden and fragrant.
  6. Let cool in the pan for 1 hour. Once fully cooled, slice into bars.

Notes

  • Roughly chop larger nuts so smaller pieces fill gaps and help hold the bars together.
  • If they remain sticky after cooling, bake a few more minutes next time to better caramelize the maple syrup.
