- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar

- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened

- 1 tablespoon all-purpose flour
- 1 teaspoon vanilla bean paste
- 1/2 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1 teaspoon lemon juice
- 1/4 cup unsalted butter, browned
Instructions
- Preheat oven to 325°F (163°C).
- Grease a 9-inch springform pan or line the bottom with parchment.
- Mix graham cracker crumbs, sugar, and salt in a bowl.
- Stir in melted butter until mixture resembles wet sand.
- Press firmly into the bottom of the pan.
- Refrigerate while preparing the filling.
- Beat softened cream cheese until completely smooth and creamy.
- Add sugar and mix until well incorporated.
- Blend in flour.
- Add vanilla bean paste and vanilla extract; mix until smooth.
- Add eggs one at a time, mixing gently after each addition. Do not overbeat.
- Stir in sour cream and lemon juice until silky.
- Melt butter in a small saucepan over medium heat.
- Continue cooking, swirling occasionally, until golden brown and fragrant.
- Remove from heat and cool slightly.
- Slowly drizzle into the batter while mixing gently.
- Pour filling over chilled crust and smooth the top.
- Tap pan gently to release air bubbles.
- Place pan on a baking sheet.
- Bake 55–60 minutes, until edges are set but center slightly jiggles.
- Turn oven off and leave cheesecake inside with door slightly open for 1 hour.
- Remove and cool completely at room temperature.
- Refrigerate at least 4 hours, preferably overnight.
- Remove from springform pan carefully.
- Slice with a clean, sharp knife.
- Serve chilled.
