  • 3 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon lemon juice
  • 1/4 cup unsalted butter, browned

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Grease a 9-inch springform pan or line the bottom with parchment.
  3. Mix graham cracker crumbs, sugar, and salt in a bowl.
  4. Stir in melted butter until mixture resembles wet sand.
  5. Press firmly into the bottom of the pan.
  6. Refrigerate while preparing the filling.
  7. Beat softened cream cheese until completely smooth and creamy.
  8. Add sugar and mix until well incorporated.
  9. Blend in flour.
  10. Add vanilla bean paste and vanilla extract; mix until smooth.
  11. Add eggs one at a time, mixing gently after each addition. Do not overbeat.
  12. Stir in sour cream and lemon juice until silky.
  13. Melt butter in a small saucepan over medium heat.
  14. Continue cooking, swirling occasionally, until golden brown and fragrant.
  15. Remove from heat and cool slightly.
  16. Slowly drizzle into the batter while mixing gently.
  17. Pour filling over chilled crust and smooth the top.
  18. Tap pan gently to release air bubbles.
  19. Place pan on a baking sheet.
  20. Bake 55–60 minutes, until edges are set but center slightly jiggles.
  21. Turn oven off and leave cheesecake inside with door slightly open for 1 hour.
  22. Remove and cool completely at room temperature.
  23. Refrigerate at least 4 hours, preferably overnight.
  24. Remove from springform pan carefully.
  25. Slice with a clean, sharp knife.
  26. Serve chilled.
